Kampong Glam eating spot A for Arbite has just launched a new menu of small plates.
Chef-proprietor Mark Wee has come up with fresh items including braised smoked pork belly ($7), green tea spaghettini ($7) and cookies and cream cheese cake espuma ($8). Each of the little bites is served up in mini portions so customers can mix and match around three plates for a full meal.
On coming up with new recipes, Wee says, “I’m always thinking about food, and constantly looking for the next thing to eat. I love to think about how I can do it differently with techniques I come across when I read books. Going through my suppliers’ price lists, and seeing what I haven’t tried, is another source of inspiration. Experimenting is very important: for every successful dish there are five that don’t make it.”
