Following the introduction of the rarest form of wagyu to Singapore, Wagyu X in Club Street offers a new way to experience the prized Hokkaido crossbreed of Kuroge black wagyu cows and Aberdeen angus bulls. You’ve tasted it seared, now try it chargrilled over binchotan charcoal and then smoked in Sakura wood fumes for a fruity cherry flavour. 

Chef-owner Masahiro Takada developed this new method by using only the best charcoal and aromatic smoking wood. Begin your new experience with starters like Chilled Truffle Somen, truffle pasta delicately tossed in truffle kombu sauce, mirin, soyu and a dash of sake, served with ikura and choice of scallop  ($26++) or uni ($34++) or Wagyu Carpaccio ($42++) drizzled with truffle oil and topped with arugula leaves and parmesan chips.

Next, sink your teeth into Binchotan Flame Grilled Wagyu Sirloin (500g $180++, 1kg $335++) or  Tenderloin (250g $135++, 500g $245++) with rendered fats charring the surface and imparting a distinct smoky flavour. They are excellent with Japanese Sweet Potato Croquettes ($16++). Complete your meal with Apple Tart ($18++) made with Granny Smith slices and served with housemade berry sauce.

Tsui Wah (Clarke Quay Central)’s late-night eats

Legendary Hong Kong brand Tsui Wah at Clarke Quay Central is perfect for night owls and supper lovers. Comprising a wide variety of dishes, from noodles, sandwiches and snacks to the restaurant’s signature drinks, its Late Night Eats menu runs from 9.15pm to 2am every Friday, Saturday, and the eve of public holidays.

Key highlights in the Noodle Expert section include Kagoshima-Style Braised Pork Cartilage in Fish Soup with Mixian ($9.80++); King Pawns in XO Sauce with Tossed Noodles ($14.80++); Vegetables in XO Sauce with Tossed Noodles ($8.80++); and Satay Beef Brisket and Tendon in Soup with Noodles ($12.80++).

Just as appealing from the Sandwich & Snacks section are the Crispy Bun with Condensed Milk ($4.20++); Jumbo Hot Dog ($6.80++); Tsui Wah Signature Pork Chop Bun ($8.80++); and a good ‘ol Toasted Luncheon Meat and Scrambled Egg Sandwich ($6++). HK-Style Drinks include Milk Tea ($3.80, hot; $4.30++, cold) and Yuen Yeung Coffee & Tea ($3.80++; $4.30++).

Tapas,24’s bold new Spanish dishes

If you enjoy Spanish cuisine done Mediterranean style, then you’ve hit the right spot here. Get ready for the Spanish fiesta of the season at Tapas,24 as it introduces a refreshed menu complemented by Spanish wines and cocktails. 

Created by Barcelona-based chef Carles Abellan and head chef Carolina Garcia, the timeless classics have been given a bold innovative twist. While the menu retains well-loved Spanish signatures such as the iconic Gambas Al Ajillo ($22++) using Andalusian artisanal olive oils and olives, other great options are Clams in Sherry ($38++) accompanied by Iberico ham and crisp asparagus; and the hearty “Tapas 24” Bikini Sandwich ($18++) with black truffles, Ibérico ham, and buffalo mozzarella.

Try the Mar Y Montania Paella ($39++) with prawns, clams, chicken, mussels, and rice cooked in a seafood stock. Crackling socarrat, the crusty charred layer at the bottom, adds depth and complexity. Served sizzling hot from a Josper oven-grill is the Spanish Ibérico Chuleta ($42++), a tender cut from the centre loin of the pig that’s boosted by a tantalising charred aroma.

15 Stamford at Capitol Kempinski Hotel Singapore introduces a new menu titled Where The Land Meets The Sea. Executive sous chef Jay Siaw aims to “showcase the wonders of fresh produce and make them the star of the dish.” Over 50 exquisite dishes demonstrate Siaw and his team’s masterful blend of flavours and textures, and highlight the distinct flavours of every fresh ingredient.

Among the salads and soups are the Crystalline Ice Plant Salad ($28++) with smoked duck breast and raspberry vinaigrette; Lobster Bisque En Croute ($34++), with mud crab remoulade and creme fraiche; and House Cold-Smoked King Salmon ($22++). The seasonal Foie Gras Kaya Toast ($38++) is another must-try, featuring organic egg foam, kaya gel, and brioche.

Premium meats and seafood include Char-grilled Wood Smoked Quail ($52++), presented in an exquisite wooden chest for the ultimate wood-smoked aroma; Braised Wagyu Beef Cheeks ($48++); Broiled Chilean Sea Bass ($50++), and Maine Lobster Pasta ($56++).

Valrhona Hot Chocolate Lava Dip ($22++) and Pandan Souffle ($32++) are among the deliciously delicate finales.
