Tantalizing wine and food pairings

While you can choose from almost 200 wines to sip on throughout the day, be sure to try dishes from the five key regions represented at Wine Fiesta as well—paired with wines native to their respective regions.

Taste the classics: the 2012 Chateau Sociando-Mallet from Haut-Medoc, France, with an elaborate array of cheese served with fruits, nuts and select artisanal bread, before moving on to the 2012 Bodegas Hermanos Perez Pascuas Vina Pedrosa Gran Reserva from Spain paired with cold cuts.

Sample the freshest seafood: the 2018 Babich Black Label Sauvignon Blanc from New Zealand with freshly shucked oysters with mignonette and Tabasco, and the 2018 Ministry of Clouds Chardonnay from Tasmania, Australia, with the sustainably sourced Spencer Gulf prawn cocktail, then go on to try Italy’s 2017 Scarbolo Pinot Grigio ILRamato with seafood stew al forno, made with a mix of the fish of the day, mussels, clams and prawns cooked in white wine and topped off with herbs from Grand Hyatt Singapore’s rooftop garden.

Catch on to the cheese wheel trend and get a taste of Italy when you try the green pea risotto, served in a Parmesan wheel with goat feta cheese, and bring out its rich flavour with Italy’s 2013 Scarbolo My Time.

Tuck into some grilled meats like the barbecue-rubbed house beef brisket, Peruvian spit- roasted chicken and smoked and grilled lamb shoulder, served with chimichurri sauce and a side of Peruvian potato salad in a cheesy aji chile pepper sauce, paired with the 2015 Betz Family Winery Clos De Betz from the United States.

Conclude your culinary journey with delightful desserts like apfelstrudel in powidl jam and vanilla sauce, and Black Forest cake matched with the 2017 Schloss Gobelsburg Riesling Auslese from Austria.

As if this gourmet line-up wasn’t enough to whet your appetite, you can also book a seat at the Winemakers’ Table Dinner on Oct 4 and join 40 different winemakers to sample close to 180 labels of wine—the Italian standout 2013 Speri Amarone Della Valpolicella Classico, the French 1996 Chateau Sociando-Mallet and the South Australian 2016 Kaesler Old Bastard Shiraz among them. These wines will be paired with shared platters served in a communal setting, where you can expect mouthwatering dishes like yellowtail ceviche (an appetizer inspired by the Grand Hyatt Singapore’s rooftop herb garden); roasted Impossible Foods meatless meatballs with whipped Greek yogurt; and summer berry trifle with passion fruit sauce. Take a peek at the full menu priced at $188 here.
