Ashino

Tucked in a corner of the charming CHIJMES, the discreet Ashino might be a little hard to locate: a small sign in Japanese leads to a narrow corridor where the entrance of the restaurant is located. Inside, behind the traditional shoji screens, the intimate 10-seater is awash with wooden furnishing. The sushi counter itself is carved from a block of 180-year old hinoki cypress wood, brought in from Yoshino. Everything else in the restaurant is imported from Japan as well. Unlike other sushi restaurants in Singapore, Ashino specializes in aged sushi, available in set and omakase menus. Alongside are a curated selection of wine and sake from Japan, mostly well-balanced, dry and not-too-sweet tipples that pair best.
