Until recently, there was little in Seletar except for the historical airport, a golf course and the sprawling JTC aerospace park. Well, that has just changed with the arrival of The Summerhouse an English countryside-inspired restaurant, garden and bar that just threw open its very pretty doors at The Oval @ Seletar Aerospace Park, in a gorgeous huge conservation bungalow. Run by the 1-Group, the people who have brought you things like 1-Altitude and Una at One Rochester, The Summerhouse brings together all the big trends and trending players in Singapore’s F&B: produce sourced from a local farm collective and kelong (ok, and Malaysia), coffee by Nomad the Gallant, some on-site farming thanks to good ol’ Edible Gardens and lots of other little touches.
The Summerhouse bungalow and garden
The team has pulled out all the stops doing up the place, and the two-story black and white bungalow has sprawling verandahs, verdant yards, floral upholstery, high ceilings, ceilinged mirrors and beautifully restored old floors.
The Dining Room
The Summerhouse Dining Room & Balcony Bar on the second floor is run by chef Florian Ridder, who moved to Singapore to work at the Michelin-starred Alma by Juan Amador, but also have a string of Michelin-starred stints under his belt back in Europe. Here, he is cooking up summery dishes with some fanciful touches and a farm-to-table push as much as possible: raspberry-pickled beetroot, panzanella with eggplant caviar, buckwheat porridge with edible flowers and the like.
Downstairs, cafe, patisserie and bar Wildseed shakes up coktails like Kaya Martini and Beetroot Sling courtesy of the dapper Yadhevan Santheran. On premises is a roasting facility by local micro-roaster Nomad the Gallant, so you know the coffee is excellent, too. Sweets are by pastry chef Jasmin Chew, who also does heavenly baking for the rest of the 1-Group.
The Summerhouse is located at Park Lane in Seletar Aerospace Park, and is open Tue-Sun, except for the restaurant, which is open Wed-Sun. More information here.
