Foodie alert: there is now a book that teaches you how to cook 25 hawker dishes, Today reported today. Singapore Hawker Classics Unveiled: Decoding 25 Favourite Dishes was a final year project by Temasek Polytechnic student Desmond Shen. Shen and his peers journeyed to various hawker centers to talk cooks about their recipes.
They then researched reviews, recreated recipes, ran taste tests, experimented with different brands of soy sauce, et cetera.
Each recipe comes with an introduction to the dish and its importance. There are also science-y bit about how the chemicals in ingredients react when cooked.
